Banana streusel cake
Banana streusel cake is the most yummy and healthy way to use those over ripe bananas. It pairs perfectly with your hot cup of coffee. It is incredibly soft, fluffy, moist and rich all at the same time!!! Unlike regular banana cake , this is topped with an amazing crunchy walnut streusel.
Streusel is a crumbly topping of butter , flour and sugar with a hint of cinnamon. This mixture can be ribboned in the middle of the cake or you can just sprinkle this on top of your cake ...
Ingredients
For cake:
All purpose flour 175 gm
Sugar 120 gm
Eggs 3
Banana 2
Baking powder 1/2 tsp
Baking soda 1/4 tsp
Oil 90 ml
Essence 1/2 tsp
For streusel:
flour 1/4 cup
brown sugar 1/4 cup
cinnamon 1/2 tsp
walnuts (crushed) 3 tbsp
butter 20 gm
Mix all ingredients until crumbly .
Method
- Preheat the oven to 180° C.
- Grease and line a 9" loaf tin with paper.
- Sieve flour, baking powder and baking soda together.
- Beat eggs, sugar, and mashed banana for 10-15 minutes.
- Add flour and mix well .
- Add oil and mix well to get a smooth batter.
- Pour half of the batter in prepared tin and sprinkle half streusel on it.
- Pour remaining batter and sprinkle the streusel on top.
- Bake for 20 minutes at 180° C and then reduce the temperature to 160° C and bake for another 25 minutes.
