Irresistible lemon brownie !!!
Lemon brownies are super soft small sized squares topped with a simple lemon glaze. These have a tender crumb and spectacular flavor . A tangy lemon flavor which comes from lemon zest and lemon juice added to the batter. To further enhance it , they are frosted with a simple lemon drizzle glaze which solidifies and gives a delightful crunch .
So easy to whip up and absolutely incredible outcome.
I can manage to eat all the slices ....forget about the calories. Not even a single slice to anyone ... not for tasting too..... They are so light and airy unlike those fudgy brownies. If you love lemons then give it a try .....
Temperature 180° C
Baking time 25 - 30 minutes
Ingredients:
All purpose flour 3/4 cup
Sugar 3/4 cup
Eggs 2
Baking powder 1/2 tsp
Lemon zest 1/2 tsp
Lemon juice 2 tsp
Butter 100 gms at room temperature
Glaze : whisk 1/2 cup of powdered sugar with juice of 2 lemons .
Method:
- Preheat the oven at 180° C.
- Grease the baking tin and line it with parchment paper or dust flour . Don't forget to tap the tin to get rid of excessive flour.
- Sieve flour and baking powder.
- mix sugar and lemon zest .
- Beat butter and sugar until fluffy .
- Add one egg at a time and beat well after each addition.
- Add lemon juice .
- Add flour and baking powder mix and whip up to get smooth batter.
- Pour in prepared tin and bake for 25-30 minutes.
- Allow it to cool completely.
- Pour lemon glaze and allow it to set.
Tips
- To make a orange flavored cake , replace lemon juice with orange juice and lemon zest with orange zest.
- I prefer pouring glaze on brownie while it is warm. It allows the brownies to absorb the glaze fully.
- Let it cool completely before slicing to get neat slices.....
