"Date n Ginger" cake
Date n ginger cake is a moist cake with dates and spices used in gingerbread. Gingerbread  refers to a broad category of baked goods , typically flavored with ginger, cloves or cinnamon and sweetened with sugar , honey or molasses. Enjoy it plain or serve  with warm caramel sauce /toffee sauce poured over it  .... It takes it to another level...... 
There is nothing better than a warm slice of this cake and a hot cup of tea on a cold rainy day....
  Ingredients
Whole wheat flour                             1 & 1/4 cup
butter                                                   50 gms
dates (chopped)                                 1 cup
Brown sugar (powdered)               1/2 cup
baking powder                                  1 & 1/2 tsp
baking soda                                        1 tsp
milk / water                                       1 &1/4 cup
ginger powder                                   1 tsp
eggs                                                      2
Vanilla essence                                  1 tsp
Method
- Preheat the oven to 180° C.
 - Grease and line the baking pan with parchment paper.
 - Put dates into a pan with water/milk and bring it to boil.
 - Take it off the flame , add baking soda and 20 gm of butter. Leave it aside to cool.
 - When cool, blend the dates in food processor or with whisk.
 - Beat remaining 30 gm butter and sugar together.
 - Add one egg at a time and beat well after each addition.
 - Add vanilla essence.
 - Add dates mixture and mix well.
 - Add flour , ginger powder and baking powder.
 - mix well and pour the batter into prepared pan.
 - Bake in preheated oven for 45-50 minutes.
