Walnut butterscotch cookies
Walnut butterscotch cookies are crispy, crunchy cookies with a nutty flavor. Kids just love these cookies .....
Ingredients
Whole wheat flour 160 gm
baking powder 1/2 tsp
butter 60 gm
castor sugar 70 gm
egg 1
Vanilla essence 1 tsp
walnuts (powdered) 4 tbsp
almond powder 2 tbsp
butterscotch chips 1/4 cup
You can use nuts in powdered form or blend them together to reduce to small pieces to get the extra crunch.
Method
- Preheat the oven to 180° C.
- Beat butter , sugar and egg together until fluffy .
- Add essence .
- Add flour and baking powder and mix .
- Add walnut powder, almond powder and chips .
- Divide the dough into 20 equal parts .
- Shape the dough into a ball and flatten to get 1 cm thickness.
- Place the cookies on a baking tray covered with parchment paper.
- Bake them in preheated oven for 15 minutes.
- Allow them to cool down completely and store in air tight container. Believe me they will soon be finished....
You can add chocolate chips too.
