It is easy to prepare ,  bit time consuming but totally worth trying. I made almost 60 balushahis and they were vanished in a time span of two days .... They are irresistable .... Believe me!!!!

Ingredients

Maida                  3 cup
Baking soda       1/2tsp
Desi ghee            100 gm
Curd                    4 tbsp
Water(ice cold)  4 tbsp
Ghee/oil               for deep frying
For sugar syrup:
2 cups sugar
1 cup   water
1tsp     cardamom pwd
4 drops food color (orange)

Method
  • Boil water and add sugar ,  cardamom pwd and food color. 
  • Boil for 5 -6 minutes to get one string consistency. 
  • Mix baking soda in flour . 
  • Mix ghee in it to get crumbly texture. 
  • Add curd and water. 
  • Do not knead the dough,  just gather it together to get smooth dough. 
  • Keep it aside for one hour . 
  • Divide the dough into 30 parts and shape them into lemon sized ball. 
  • Make an indent in the centre with thumb. 
  • Heat oil/ghee . 
  • Keep the flame low once the oil is medium hot. 
  • Slide the balls in oil and cook on low flame.
  • They will puff  up on their own and start floating on surface . 


  • It will take 20 minutes to fry a batch . 
  • Once cooked,  allow them to cool. 
  • Soak the fried balushahis in sugar syrup for 2-3minutes. 
  • Take them out and allow the sugar syrup to set .
