Baalushahi
Balushahi is traditional indian sweet prepared during diwali and holi . Balushahi is delicious, flaky, crisp from outside and melt in mouth within . 
It is easy to prepare ,  bit time consuming but totally worth trying. I made almost 60 balushahis and they were vanished in a time span of two days .... They are irresistable .... Believe me!!!! 
Ingredients
Maida                  3 cup
Baking soda       1/2tsp
Desi ghee            100 gm
Curd                    4 tbsp
Water(ice cold)  4 tbsp
Ghee/oil               for deep frying
For sugar syrup:
2 cups sugar
1 cup   water
1tsp     cardamom pwd
4 drops food color (orange)
Method
- Boil water and add sugar , cardamom pwd and food color.
 - Boil for 5 -6 minutes to get one string consistency.
 - Mix baking soda in flour .
 - Mix ghee in it to get crumbly texture.
 - Add curd and water.
 - Do not knead the dough, just gather it together to get smooth dough.
 - Keep it aside for one hour .
 - Divide the dough into 30 parts and shape them into lemon sized ball.
 - Make an indent in the centre with thumb. 

 - Heat oil/ghee .
 - Keep the flame low once the oil is medium hot.
 - Slide the balls in oil and cook on low flame.
 - They will puff up on their own and start floating on surface .
 
- It will take 20 minutes to fry a batch .
 - Once cooked, allow them to cool.
 - Soak the fried balushahis in sugar syrup for 2-3minutes.
 - Take them out and allow the sugar syrup to set .
