Orange peanut butter cake
Orange peanut butter cake is delicious , crunchy and moist cake with the benefits of orange and peanut butter. It can be iced or can be enjoyed plain with just a drizzle of  orange glaze. For icing you can mix peanut butter with orange juice and sugar. Most easiest cake I have ever baked .... you just need to mix all the ingredients and bake .
Ingredients
Whole wheat Flour 175 gm
Sugar                             175gm
Butter                            50 gmRefined oil 50 ml
Crunchy peanut butter 40 gm
Orange zest 1 tsp
Orange peel 1 tbsp
Eggs 3
Baking powder 1 & 1/2 tsp
Essence 1 tsp
Method
- Preheat the oven to 160° C.
 - Prepare the baking tin by greasing and lining it with parchment paper.
 - Sift the flour and baking powder together.
 - Beat butter, peanut butter, sugar and eggs .
 - Add zest and peel .
 - Add essence.
 - Add flour mixture and mix until the mixture is smooth.
 - pour the mixture in prepared tin and bake in preheated oven for 40 - 50 minutes.
 - Add the orange peel chunks to the batter, to do so remove the white pith and cut the peel into small chunks.
 - Bake in the preheated oven for 40-45 minutes.
 
Tips
- To get the orange flavor , I prefer grinding the peel of orange with sugar . Before adding the peel to sugar ,remove the pith (white part) and then grind it .
 - For icing mix 50 gm peanut butter to 50 gm of powdered sugar . Add 3 tbsp orange juice and mix well.
 - Can use creamy peanut butter too.
