Kiwi cake







Kiwi cake ....delicate, buttery, sweet and right amount of tanginess at the same time ... Truly complex flavors and tiny black seeds of kiwi make it more beautiful and add crunch...... delightfully refreshing !!!
                          
I personally like loaf cakes and love to pour lemon sugar glaze  but this cake doesn't need that. Kiwis make this cake smell absolutely amazing.............


                         
                                             






Ingredients 

Eggs                                   3
All purpose flour               185 gm
Baking powder                  2 tsp
Butter, softened                 110 gm
Sugar                                175 gm
Vanilla extract                  1 tsp
Kiwi                                  2


Method

  • Preheat the oven to 160° C.
  • Grease and line the loaf tin.
  • Peel and chop the kiwi .
  • Sift flour and baking powder together.
  • Beat eggs for minimum 4-5 minutes.
  • Add flour, baking powder, butter, vanilla extract, sugar  and beat well until the mixture is smooth.
  • Stir in the chopped kiwi.
  • Spoon the mixture into prepared pan and smooth the surface .
  • Bake in preheated oven for 50-60 minutes .
