Thandai rolls -Indian kardemummabullar !!!
Fika ,a swedish tradition, is all about taking a break , hang with friends and indulge in cinnamon buns, cakes, cookies , cardamom rolls with a cup of coffee to appreciate the good things in life... Thandai rolls are similar to Kardemummabullar, a swedish cardamom roll. These are buttery and delicious, filled with thandai paste and brushed with thandai glaze.....
for dough
1 cup lukewarm milk
2 1/4 tsp active dry yeast
1/3 cup sugar
3 1/4 cup all purpose flour
1 tsp cardamom seeds powder
1 tbsp thandai powder
70 gm butter
for thandai paste
50 gm butter
4 tbsp thandai powder
1/4 cup sugar
1 tsp almond essence
mix butter, thandai powder, sugar and essence until smooth and creamy.
for glaze
1/4 cup water
2 tbsp thandai powder
1/4 cup sugar
Heat water , sugar, thandai powder for 2-3 minutes or until sugar has dissolved completely.
Method
- Add yeast to lukewarm 1/4 cup of milk with 1 tsp of sugar .Stir and let the yeast activate .
- Mix flour, sugar, cardamom powder, thandai powder.
- Add the activated yeast milk mixture, remaining 3/4 cup milk and mix until dough comes together.
- Add butter and knead the dough .
- Place in a greased bowl , cover with cling wrap and allow it to proof.
- Once the dough has doubled, punch the dough gently .
- Roll out the dough into a rectangle .
- Spread thandai paste on the rectangular dough .
- Fold the left side to middle and then fold the right side over the left side , as we do for puff pastry.
- Turn the log by 90 degree and roll out the dough .
- Cut strips of 2cm width and shape each strip into a roll or the shape you like.

- Place rolls on baking sheet ,cover and let them rise for 1 hour.
- Preheat the oven to 180 C.
- Bake the rolls in preheated oven for 20 minutes or until top turns golden brown.
- Brush the glaze immediately and sprinkle pistachio.
- Enjoy them warm !!!
