Zucchini Carrot cake
Ingredients
All purpose  flour        3 cups
Baking powder           1/4 tsp
Baking soda                 1 tsp
Nutmeg powder          1/4 tsp
Orange peel                 2 tbsp
Cane sugar                  1+ 1/4 cup
Applesauce                   1/4 cup
Eggs                               3
Olive oil                         1 cup
grated zucchini            1 cup
Grated carrot               1 cup
Walnuts                          7-8 kernels
Vanilla essence             1 tsp
Method
- Sieve flour , baking powder and baking soda, nutmeg powder.
 - Line two 8" tins with parchment paper.
 - Preheat oven to 180° C.
 - Beat eggs and sugar together for 7-8 minutes.
 - Add oil gradually.
 - Add orange peel , essence and applesauce.
 - Mix dry ingredients into this mixture.
 - Add grated zucchini and carrot and mix well.
 - Crush the walnuts or pulse them in grinder for a second.
 - Add walnuts , mix gently and transfer the batter to prepared tins.
 - Bake for 55-60 minutes.
