Bottle gourd /lauki cake



 Bottle gourd has always been regarded as one of the healthiest veggies. This versatile veggie is full of water and minerals and keeps you hydrated. It definitely doesn't  get as much attention as it deserves. Try this gorgeous cake and you'll surely fall in love with this.
The cake is fragrant, has soft and delicate crumb yet sturdy. Tastes similar to a  mawa cake .


Kids won't even come to know that it has "lauki"  in it . Let them play the guessing game of familiar flavor😉😉



 Ingredients


For mawa:

It just takes six to seven minutes in microwave to prepare mawa  and only two ingredients are required....  How simple is that ....

 Put one cup of milk powder in a microwave safe bowl and add 200 ml cream  Mix well . Microwave it for 2 minutes and  then take it out ... mix n microwave again for two minutes ...  Mix and microwave again for one minute ... Crumbly mawa is ready ..


For lauki mawa mix:

Grated bottle gourd/lauki        2 cups
Ghee                                               1 tbsp
Cardamom powder                   1 tsp
Sugar                                           4 tbsp
Mawa                                         80 gm

Heat ghee and add grated bottle gourd, sugar and  cardamom powder. Cook  on medium flame until water has evaporated. Add mawa to it and cook for  few minutes.
Allow it to cool before adding to cake batter.


All purpose flour         1 &1/4 cup
Baking powder            1/2 tsp
Sugar                              3/4 cup
Eggs                                2
Milk                                1/3 cup
Butter                             80 gm
Cardamom powder     1/4 tsp
Vanilla essence            1 tsp



Temperature     180°C
Baking time 50-55 minutes
9" loaf tin

Method


  • Preheat oven to 180°C. 
  • Grease a loaf tin and line it with parchment paper. 
  • Sieve all purpose flour,  cardamom powder and baking powder. 
  • Beat butter and sugar for at least 5 minutes to get fluffy white batter. 
  • Add one egg at a time and beat well after each addition on medium speed.
  • Add lauki mawa mixture and mix well. 
  • Add vanilla essence. 
  • Add sieved dry ingredients and milk alternately in batches . 
  • Mix well and bake in preheated oven at 180°C for 50-55 min. 
  • Let it cool down completely before slicing. 
  •  Flavors are more intense next day.
