Almond mango cake



This dual flavor cake is moist , tender loaded with almond flavor. As festive season is still on , this is perfect for Christmas .It's simple, but absolutely delicious and especially great alongside a cup of coffee or tea. If you're almond obsessed , you'll love it. I warmed up few teaspoons of mango jam and added that to the batter . Just swirl it with skewer and bake it to a beautiful golden almond mango flavored cake. 





                    
                              

Sprinkle few slivered almonds or almond flakes on top . I used Leifheit gourmet cutterto get perfect flakes.












Ingredients

1 cup= 240 ml
All purpose flour        1 & 1/4 cup
Baking powder           1 & 1/2 tsp
Powdered almond      1/2 cup
Sugar                             1 cup
Butter                             100 gm
Eggs                                3
Milk                                 1/2 cup + 1/4 cup
Almond essence            1 tsp
Mango jam                    3 tsp
Almond flakes              to sprinkle on cake



Method


  • Preheat the oven to 170° C.
  • Grease the pan and dust it with flour  or line it with parchment paper.
  • Sieve flour and baking powder. 
  • Beat butter and sugar together until light and fluffy.
  • Add one egg at a time and beat well after each addition.
  • Add flour mix and almond powder to it .
  • Add essence and milk and beat it to get smooth  lump free batter.
  • Pour half batter in prepared pan and add jam on it .
  • Pour the remaining batter  ans swirl it with skewer.
  • Sprinkle flaked almonds on top and bake in preheated oven for 45- 50 minutes.
