Eggless red velvet cake
This eggless red velvet cake is moist , soft , rich , vibrant and amazingly tasty ... I am so excited to share this eggless recipe with you as this turned out so good and delicious. I made this for my daughter's birthday. I frosted the cake with whipped cream .

Ingredients
I use US cup measurement - 1 cup = 240 ml
All purpose flour 1 & 1/3 cup
Sugar 1 cup ( for frosted cakes use 3/4 cup)
Baking soda 1 tsp
Cocoa powder 1 1/2 tbsp
Curd 4 tbsp , mix it with water to make 1 cup buttermilk
Oil 1/2 cup
Vanilla extract 1 tsp
Vinegar 1/2 tbsp
Red gel color 2 tsp
Milk 1/8 cup
Method
- Prepare the tin by greasing and lining it with parchment paper.
- Preheat the oven to 170° C.
- Mix curd with water to make 1 cup buttermilk.
- Add oil , red gel color and essence to buttermilk.
- Sieve flour, baking soda , cocoa powder and sugar together.
- Add dry ingredient to wet ingredients gradually .
- Add milk and mix gently to get smooth lump free batter.
- Add vinegar and whisk it quickly.
- Pour the batter in prepared tin .
- Bake in preheated oven for 25-30 minutes or until toothpick inserted in the center comes out clean.
