Hurricane swiss rolls with jam filling
Few videos on You Tube tempted me to try this beautiful looking hurricane roll. It is named as hurricane because of the pattern which is visible after you slice the roll. Followed my no oil, no butter recipe of swiss roll to make this. These are filled with mixed fruit jam and sprinkled with dessicated coconut. No fancy equipment required to make these... These are not so perfect hurricane rolls but they are tender and delicious.
Ingredients
All purpose flour 100 gm
Powdered sugar 100 gm
Eggs 3
Baking powder 1 tsp
Essence 1 tsp
gel food color few drops
Mixed fruit jam 3 tbsp
Dessicated coconut and castor sugar to sprinkle .
Method
- Preheat oven to 170° C.
- Beat eggs on high speed until pale.
- Add sugar, essence and beat until it triples in volume.
- Add flour and baking powder .
- Mix gently with spatula , do not deflate the batter .
- Pour 2/3 batter in the baking tray lined with parchment paper.
- Add color to the remaining batter and mix .
- Pour the colored batter on white batter.
- With the back of ladle , make lines vertically and then horizontally as shown below .
- Bake in preheated oven for 12-14 minutes, depending on your oven.
- Sprinkle dessicated coconut and castor sugar on parchment paper.
- Flip the sponge on it .
- Spread jam on the sponge and and roll it up.
- Leave it to cool and then chill in refrigerator for few hours before slicing.
