Kulche


Kulche is the most popular indian flatbread. Super soft textured kulche can be enjoyed with amritsari chole or any gravy. Stuff these with spicy potato mix or paneer and enjoy them with onion tamarind chutney. To satiate my taste buds and to keep my baking keeda satisfied , made kulche on tawa. 

I'm not able to bake anything for last few days as my oven door needs some repair ..... 


                       


Ingredients

All purpose flour                   2 cups
Sugar                                       2 tbsp
Milk powder                          2 tbsp
Instant yeast                          1 & 1/2 tsp
Salt                                           1/4 tsp
Olive oil                                   2 tbsp
Warm water                          1/2 cup + more  for kneading if required

Method
  • Mix flour , milk powder, sugar , salt and yeast.
  • Add water gradually to knead the dough.
  • Knead it for 5-7 minutes to get smooth and elastic dough.
  • Add olive oil and knead for 2-3 minutes.
  • Keep it in a greased bowl and cover it with cling wrap.
  • Keep aside for first proof, allow it to double up.
  • Once doubled, punch it down to release air pockets.
  • Divide and shape  into equal sized balls.
  • Roll each ball into a circle .
  • Allow them to sit covered for almost one hour .
  • Heat the griddle to medium hot and cook the kulchas and see them puffing up.
  • Once done, brush butter and sprinkle red chilli powder and chaat masala.
You can bake them too at 190° C in preheated oven for 20 minutes.
