Fragrant cake flavored with gulkand, cardamom , almond flour and topped with rose glaze and pistachios. Addition of almond flour makes this cake so irresistibly good . Almond flour in cakes imparts moistness and creates beautiful texture.... Not a fan of rose flavor but I love this combination and the middle eastern aromas spreading everywhere....

There are several versions of this cake , but all have floral notes like rose, cardamom and nuts. The cake is rich, moist and decadent. It puts you in an absolute good mood. You're going to fall in love with cake.

Ingredients

For cake

All purpose flour                        1& 1/2 cup
Almond powder                          1/2 cup
baking powder                           1 tsp
Sugar                                            1 cup
butter                                            100 gm
oil                                                   3 tbsp
gulkand                                        2 tbsp
Lemon juice                                 2 tsp
Cardamom powder                   2 tsp
Eggs                                               2
Vanilla extract                            1 tsp
Milk                                                1/4 cup

For glaze

1/2 cup         sugar 
2 tsp              gulkand
2 tbsp            milk


Combine powdered sugar, gulkand and milk  to prepare glaze.

Pistachios to sprinkle on glaze !!!


Method

  • Preheat oven to 170° C.
  • Line an 8" cake tin with parchment paper.
  • Cream butter and sugar until fluffy . Add oil gradually and continue beating well.
  • Add one egg at a time and beat well after each addition.
  • Add lemon juice, gulkand and vanilla extract.
  • Add flour, baking powder, almond powder and cardamom powder.
  • Mix gently and add milk to adjust the consistency .
  • Pour the batter  in the prepared tin.
  • Bake in preheated oven for 45-50 minutes.
  • Pour glaze over cooled cake and sprinkle pistachios !!
