Strawberry almond cake


Strawberry almond cake is soft, moist  and super yum. It is the perfect dessert to make when you want to treat your friends to something special but don't want to play  around with layered cakes loaded with frosting. This cake is so simple and elegant and surely a winner.It's so perfect for weekend baking... This is one of the prettiest cake that I have made and it is easy to put together too.
The almond powder makes it  moist, and slivered almonds on top provide a great crunch. Dust it with powdered sugar or serve with a dollop  of whipped cream or cream cheese.




Ingredients

All purpose flour                       1 & 1/2 cup
Almond powder                         1/2 cup
Baking powder                         1 tsp
Sugar                                           1 cup 
Butter                                           100 gm
Oil                                                 3 tbsp
Lemon zest                                 1 tsp
Eggs                                            2
Vanilla essence                         1 tsp
Strawberries                             1 cup (chopped)
Milk                                            1/2 cup
Slivered almonds                    1/4 cup


Method
  • Preheat the oven to 160° C.
  • Grease the pan with butter and dust with flour.
  • Beat butter , oil, sugar , for 3-4 minutes.
  • Add eggs and beat until light and fluffy.
  • Add essence and zest .
  • Sieve flour , baking powder and almond powder together and add to the butter sugar mixture.
  • Mix gently until well combined.
  • Add milk gradually to reach desired consistency (dosa batter consistency is what we are looking for).
  • Stir in strawberries and pour the batter in prepared pan.
  • Bake in preheated oven for 50-60 minutes.
