Eggless strawberry cake with almond butter sauce






Fresh strawberries and almond butter sauce turn this simple eggless cake into something special . The cake soaks up the sauce and adds to the rich flavor. Strawberries add a refreshing tartness to it. Serve it with warm sauce or dollop of whipped cream and a generous sprinkle of slivered almonds on top. 
The sauce is simple and to die for.....I would just make the sauce and use it on everything .... pancakes, toasts and ice-cream.. it is delicious !!!





look at the crumb .... don't think about calories , pour the sauce generously !!!






Ingredients

All purpose flour                     2 cups
Sugar                                         1 cup
Baking powder                        2 tsp
Butter                                        60 gm
Milk                                            1 &1/4 cup 
Vanilla essence                        1 tsp
Strawberries (chopped)         1 cup

For sauce -  Cook 45 gm butter + 1/2 cup sugar + 1/2 cup milk + 2 tbsp almond meal + almond essence for 3-4 minutes .

Method


  • Preheat oven to 160°  C.
  • Grease an 8 inch pan and dust with flour.
  • Beat butter and sugar for 3-4 minutes.
  • Add milk and mix well.
  • Add flour , baking powder and essence .
  • Mix gently  until combined.
  • Add more milk if you find the batter too thick.
  • Add strawberries and pour in the prepare pan.
  • Bake in preheated oven for 50 minutes.
  • Once done, allow it to cool.
  • Pour almond butter sauce over it and sprinkle slivered almonds . 
  • Pour sauce while serving too......

Sorry to hear that ...How was the batter consistency? If your batter was thick add more milk to adjust the consistency . Each flour has different absorbency level so you need to sometimes adjust the liquid quantity.

Tried the cake today. Its a brilliant recipe. The entire family loved it. They are quite fussy so everyone liking it is a huge thing. It's a simple recipe to follow and accurate measurements. I cudnt take great pictures as the folks were demolishing it. Skipped the nut sliver on top due to dietary restrictions of a family member..

Hey Kiran, finally tried the cake. I used 1/2 all purpose flour and 1/2 whole wheat flour and light brown sugar for the sweetness. The cake was yumm! Super moist and soft and was over in no time.
