Rustic apple tart /apple galette



Urge to have apple pie but want to keep it simple, this free form rustic tart comes to my rescue. No pie or tart mould needed , consists of a thin layer of cinnamon sugar coated apples on a flaky crust . Use apple, strawberries, blueberries, plum, peaches or any other fruit to create your favorite tart.

Homemade pie crust is easy , quick and comes together easily. You don't have to spend time on crimping the dough into tart pan. Sometimes simple and imperfect things are charming and magical....  



Ingredients

 All purpose flour                   2 & 1/2 cup
Salt                                             1 tsp
Sugar                                        1 tbsp
Cold butter                               225 gms
Ice water                                  6-8 tbsp
Almond powder                    3 tbsp

Apples (sliced )                      2
Cinnamon                              1 tsp
Brown sugar                         1 tbsp


Method
  • Mix apple , sugar and cinnamon and leave aside.
  • Add flour , salt and sugar to food processor
  • Add butter cubes over flour and  pulse until coarse crumbs are visible.
  • Add 6 tbsp of ice water and pulse until combined and dough comes together.
  • Shape it into a ball, don't knead .
  • Divide the dough into two equal portions .
  • Cling wrap each portion and refrigerate for an hour.
  • Roll the pie dough into a rectangle or circle.
  • Place it on a parchment paper .
  • Sprinkle almond powder on the crust.
  • Arrange apple slices on top of almond powder leaving two inches at the edge.
  • Fold the edges over apple slices in any pattern.
  • Brush the top of crust with milk and sprinkle sugar on top.
  • Chill the tart for 20-25 minutes.
  • Preheat oven to 180° C.
  • Bake in preheated oven for 40-45 minutes, until apples are soft and crust is cooked .
Don't miss almond powder, as it'll absorb the juices of apple preventing our pie crust from getting soggy... Otherwise use apricot preserve.
