Lemon crumble cake

This cake requires lemon curd which is quite easy to make. Lemon curd is made by whisking milk, corn flour, lemon juice, sugar and heating the mixture until it starts to thicken. Butter and lemon zest is added after taking it off from flame.
Ingredients
For cake batter-
Butter 100 gm
All purpose flour 1 & 1/2 cup
Baking powder 1 tsp
Sugar 1 & 1/4 cup
Lemon zest 2 tsp
Lemon juice 1 tbsp
Eggs 3
Curd 1/2 cup
Milk 1/4 cup
For crumb-
All purpose flour 1/4 cup
Almond powder 1/4 cup
Sugar 1/2 cup
Cold butter 3 tbsp
For lemon curd
Milk 100 ml
corn flour 2 tbsp
sugar 100 gm
lemon juice 60 ml
lemon zest 1/2 tsp
butter 40 gm
Method
To prepare lemon curd-
- Add corn flour to milk and mix well.
- Add sugar , lemon juice to it and cook while stirring continuously.
- Once it thickens, add lemon zest and butter.
- Transfer to another bowl and allow it to cool.
- You can add few drops of yellow color.
- Refrigerate the lemon curd until it has set.
To prepare crumble-
- Combine flour , almond powder with granulated sugar and cold butter and blend it until the mixture resembles bread crumb or granules.
To prepare cake batter-
- Preheat the oven to 170° C.
- Prepare a 8 inch square tin by lining it with parchment paper.
- Combine butter and zest and beat until creamy.
- Add sugar and continue to mix until fluffy .
- Add eggs, one at a time, beating well after each addition.
- Add flour and baking powder along with curd and mix gently.
- Add milk and mix well to get smooth batter.
- Pour the batter in prepared tin.
- Spread lemon curd over the batter.
- Sprinkle the prepared crumble over it and bake in preheated oven for 45-50 minutes.
- Allow the cake to cool in pan .
- Slice n serve !!!
