Lemon crumble muffins





Happy World baking day !!! This day is meant to show people how much fun it can be to bake a cake , breads, or some cookies.... Baking is great fun. Make something to enjoy in your home during this lockdown. I'm making this day deliciously unforgettable by making these moist , tender and so flavorful lemon muffins. The batter is topped with a crumble and baked to perfection which gives you a moist cake with crunchy top.




Ingredients

For cake batter

All purpose flour                         1 & 1/2 cup
Sugar                                             1 cup
Baking soda                                  1/8 tsp
Eggs                                                2
Curd                                               1/2 cup
Butter                                            1/2 cup
Milk                                                1/4 cup
Lemon zest                                    1/2 tbsp
Lemon juice                                  1/2 tbsp
Vanilla extract                             1 tsp


For topping

Almond powder                     1/4 cup  (You can use same quantity of all purpose flour too)
sugar                                       1/4 cup
Butter                                     30 gm

For glaze

Sugar                                   3 tbsp 
Lemon juice                        2 tbsp


Method

  • Preheat the oven to 170° C.
  • In a large mixing bowl , combine flour, baking soda .
  • Cream butter and sugar together for 4-5 minutes.
  • Add one egg at a time, beat well after each addition.
  • Add curd , lemon zest and lemon juice  along with essence.
  • Mix well and add milk gradually , you might not need all of it.
  • Mix well to get smooth batter.
  • Pour the batter in muffin liners.
  • In a small bowl , combine almond powder, sugar and butter until it resembles coarse crumbs.
  • Sprinkle the crumble over muffin batter.
  • Bake these in preheated oven for 20 - 22 minutes until a toothpick inserted in center comes out clean.
  • Cool the muffins  for 5- 10 minutes.
  • Whisk glaze ingredients and drizzle over warm muffins.

Tried this and it came out really well. My family loved it, thanks for the recipe. In general, if we have to replace APF with WWF, what are the adjustments we need to do. just curious to know and try this with WWF

You need to adjust the liquid quantity as wwf absorbs more liquid. Add milk to get desired c
onsistency.
