Almond muffins
These almond muffins are moist, tender , loaded with almond flavor. These are light and fluffy muffins with almond powder in batter and are topped with almond flakes. The almond flakes not only look pretty but gives an amazing texture to muffins.
The recipe is simple but yields absolutely delicious muffins and are great alongside a cup of tea. If you're almond obsessed like me 😉 , you'll love these.
Ingredients
1 cup= 240 ml
All purpose flour 1 & 1/4 cup
Baking powder 1 & 1/2 tsp
Powdered almond 1/2 cup
Sugar 1 cup
Butter 100 gm
Eggs 3
Milk 3/4 cup
Almond essence 1 tsp
Almond flakes to sprinkle on cake
Method
- Preheat the oven to 170° C.
- Grease the muffin pan and dust it with flour or use muffin liners.
- Sieve flour and baking powder.
- Beat butter and sugar together until light and fluffy.
- Add one egg at a time and beat well after each addition.
- Add flour mix and almond powder to it .
- Add essence and milk and beat it to get smooth lump free batter.
- Pour the batter in liners.
- Sprinkle flaked almonds on top and bake in preheated oven for 20 minutes.
