Almond nan khatai






A melt in mouth cookie, with the rich aroma of desi ghee and cardamom , nan khatai  is a perfect example of eggless cookies. Almond powder improves the flavor and makes every bite just melt in mouth .These are made with whole wheat flour  and without any baking powder or baking soda.





Ingredients

Whole wheat flour                                  1 cup
Besan (gram flour)                                1/2 cup
Suji (semolina)                              2 &  1/2  tbsp
Almond powder                                    1 tbsp
Desi ghee                                        1/2 cup
Sugar                                                       1/2 cup
Cardamom powder                              1/2 tsp
Milk                                                           2 tbsp
Almond flakes                                        4 tbsp


Method

  • Sift besan , whole wheat flour together . Mix almond powder and suji in it.
  • Beat ghee and sugar until light n fluffy.
  • Add sifted dry ingredients along with cardamom powder.
  • Mix well and bring everything together but don't knead , I added one teaspoon ghee at this time .
  • You might need a teaspoon more of ghee if the mixture is crumbly.
  • Divide into equal portions and shape them into  small lemon size ball. 
  • Flatten each ball and apply milk  and roll this side in almond flakes .
  • Keep the cookies in refrigerator for 10 minutes.
  • Preheat the oven to 150° C.
  • Bake the cookies for 18-20 minutes.
