Baked vada pav


Vada pav is a famous  vegetarian fast food snack of Maharashtra and is widely popular across all parts of India. It has a spicy  fried potato dumpling sandwiched between a pav and served with a spicy garlic chutney. It is also referred as the poor man's burger as it is available at a very reasonable price  and grab-n-go type snack. This one is a baked version of the traditional  vada pav. Serve it with green chutney and  garlic chutney !!! 

   
          


Ingredients

For dough-

All purpose flour   2 & 3/4 cup 
Milk powder            2 tbsp
Instant yeast           3/4 tsp
Salt                             1  tsp
Sugar                          2 tbsp
Lukewarm milk       1 & 1/2 cup 
Olive oil                      2 tbsp

For aloo masala filling-

Boiled potatoes            5
Onion                            2
Garlic  chopped           1 tsp
Mustard seeds              1 tsp
Curry leaves                 6
Green chilli                    3
Turmeric powder        1/2 tsp
Red chilli powder        2 tsp
Salt                                 1 & 1/2 tsp
Oil                                   3 tbsp
Asafoetida                     a pinch

For garlic chutney-

Roasted peanut                   1/4 cup
Dessicated coconut             1/2 cup
Sesame seed                         2 tbsp
Salt                                         1/2 tsp
Red chilli powder                1 - 2 tsp
Garlic clove                           6

Grind everything together to make a powder and adjust seasoning as per your taste.


Method

For aloo masala filling -

  • Heat oil in a pan. Add mustard seeds, chopped garlic , curry leaves and asafoetida.
  • Add chopped onions and green chillies  and saute them well for 3-4 minutes.
  • Add turmeric powder , red chilli powder and salt and mix well.
  • Add boiled and mashed potatoes and mix everything well and cook for 7-8 minutes on low heat.
  • Adjust the seasoning and allow it to cool.
  • Take small portions of  the filling masala and shape them into a ball .
  • Roll these balls in chutney  to coat them well and keep them aside.
For dough-
  • Mix flour , milk powder, and salt.
  • Dissolve sugar in lukewarm milk.
  • Add one cup of flour mix and yeast to lukewarm milk and stir. 
  • Gradually keep on adding flour mix.
  • Once all the flour is mixed in milk , start kneading the dough.
  • It'll be sticky but add oil ,1 tbsp at a time, and continue kneading for 9-10 minutes.
  • After 10 minutes the dough will be smooth, keep it covered in a greased bowl for first proof.... approx 1 hour or until it doubles up.
  • Once doubled, punch the dough gently to remove air pockets.
  • Divide the dough into 18 equal parts.
  • Shape each portion into a ball , flatten these into a circle of  3 " diameter. place the filling in the centre , gather the edges and seal . 
  • Shape it into a perfect round one, and place them in a greased tray leaving some place between them.
  • Keep it covered for 20 minutes for second proofing.
  • Preheat the oven to 180° C.
  • Brush the pav with milk and sprinkle sesame seeds . 
  • Bake for 20 minutes in preheated oven.
  • Once done, brush butter on pav and cover it with paper napkin or kitchen towel.
