Eggless honey cake
Honey cake is popular cake found in all Iyengar bakeries of south India. This simple and easy cake is basically a vanilla sponge soaked in sugar honey syrup, topped with jam and coconut flakes.This sponge has orange juice and orange peel and soaked with orange syrup.

Ingredients
All purpose flour 1& 1/4 cup
Baking powder 1 tsp
Baking soda 1/2 tsp
Oil 1/2 cup
Orange juice 1/2 cup
Lemon juice 1 tsp
Vanilla essence 1 tsp
Orange peel 1 tbsp
Condensed milk 1 cup
For condensed milk-
Milk powder 1/2 cup
Sugar 3 tbsp
Butter 1 tbsp
Water 1/4 cup + 2 tbsp
For syrup-
Water 1/2 cup
Sugar 2 tbsp
Orange juice/ honey 1/4 cup
Prepare syrup by mixing water and sugar and bring it to boil until sugar dissolves . Once sugar melts, turn the flame off. Add honey or orange juice to lukewarm water. I don't like honey much so added half honey and half orange juice.
For topping
Mixed fruit jam 4 tbsp
Dessicated coconut 1/2 cup
Method
- Preheat the oven to 170° C.
- Prepare a 8" square tin by greasing and lining with parchment paper.
- Mix condensed milk and oil in a big mixing bowl.
- Add peel and orange juice.
- Add lime juice and vanilla extract and mix well.
- Sift all purpose flour , baking powder and baking soda.
- Add dry ingredients to wet ingredients and mix well to get smooth mixture.
- Pour the batter in prepared tin and bake it in preheated oven for 30-35 minutes until done.
- Allow the cake to cool for 10 minutes and then prick the cake all over the surface.
- Pour the syrup over cake slowly.
- Microwave the jam for a minute and spread on cake .
- Sprinkle dessicated coconut over it.
