Eggless semolina cake
Semolina cake is eggless and a one bowl dessert similar to basbousa , a middle eastern dessert, that doesn't require a mixer and comes out moist and tangy. It is made with semolina , yoghurt and milk . A simple yet delicious tangy syrup is poured over the cake which keeps it moist . This cake has light crumbly texture because of semolina.
Ingredients
Semolina 1 & 1/2 cup
Sugar 1 cup
Baking powder 2 tsp
Butter 150 gm
Curd 1 cup
Milk 3/4 cup
Vanilla essence 1 tsp
Cardamom powder 1/4 tsp
Lemon zest 1 tsp
For sugar syrup
Sugar 1/2 cup
Water 3/4 cup
Lemon juice 2 tbsp
Bay leaves 2
Salt 1/8 tsp
Tang (orange flavored) 2 tbsp
Method
- For sugar syrup - Boil water and sugar until sugar dissolves . Add bay leaves and let it simmer on low heat for 5 minutes.
- Remove from heat and add lemon juice , tang and salt.
- Allow it to cool.
- Preheat oven to 170° C.
- Prepare a 8 inch square pan by greasing with butter and dusting with flour.
- Melt the butter and allow it to come to room temperature.
- Mix semolina, sugar , baking powder ,zest , cardamom powder in a mixing bowl. Add milk and yoghurt to this , add melted butter and mix well.
- Gently pour it in prepared tin and bake it in preheated oven for 40 minutes.
- Take the cake out of tin and allow it to cool for 10 minutes.
- Pour the syrup over it .
- You can serve the syrup while serving too.
- Garnish with pistachios.
- You can soak the cake with lemon syrup or rose syrup .
- You can add orange squash or orange slices to sugar syrup instead of tang.
