Gluten free banana bread
Adapted from Nigella Lawson's GLUTEN FREE BANANA BREAD
Ingredients
Rice flour 1&1/3 cup
Almond powder 1 cup
Brown sugar 2/3 cup
Mashed banana 1& 1/2 cup
Eggs 2
Baking powder 2 tsp
baking soda 1/2 tsp
Butter 100 gm
chocolate chips 1/4 cup
Dessicated coconut 3 tbsp
Thick curd 1/3 cup
Vanilla extract 1 tsp
Walnuts (chopped) 1/2 cup
Almonds flakes 1/4 cup
Milk 1/4 cup
Method
- Preheat oven to 170° C.
- Prepare an 8X4 " tin.
- Mix rice four , almond powder, baking powder, baking soda .
- Beat butter and sugar until light and fluffy.
- Add one egg at a time , beating well after each addition.
- Beat in mashed banana , vanilla and curd .
- Once everything is mixed well , add flour mix and milk to get smooth batter.
- Fold in dessicated coconut, chocolate chips , chopped walnuts and almond flakes.
- Pour the batter in prepared tin and bake in preheated oven for 50-55 minutes.
