Makhni pizza muffin




These are easy makhni pizza muffins !!! No need to activate the yeast  and no long proofing hours.... just mix the ingredients, knead the dough and keep aside  for 5-10 minutes. If your filling is ready, these are done in half an hour. Serve these as evening snacks to kids and don't forget to make some  extra muffins as  they'll ask you for more ......
You can add filling  of your choice and sauce too ...... Try different variations and enjoy !!!



Ingredients


For dough-

All purpose flour                2 cups
Instant yeast                       1/2 tbsp
Milk powder                        1 tbsp
Salt                                         3/4 tsp
Sugar                                     2 tsp
Warm water                         3/4 cup
Fresh cream                          2 tbsp
Olive oil                                  1 tbsp

* This  works great as instant pizza dough .

For paneer masala

Onions                                    2
tomatoes                                3
Green chillies                        4
Garlic cloves                         6
Fresh cream                          2 tbsp
Salt                                          to taste
turmeric powder                 1/2 tsp
kashmiri mirch powder     1 tbsp
Paneer                                    100 gm
Oil                                           3 tbsp

Grated cheese                       1 cup
Mixed herbs                          to sprinkle 
                  

Method
  • For preparing the dough , mix yeast in all purpose flour  and add rest of ingredients except olive oil.
  • Knead it to get a smooth dough. Apply olive oil all over it .
  • Keep it covered in greased bowl . Leave aside for 5-10 minutes.
  • Heat oil in a pan. Add chopped garlic, chopped onions and saute them.
  • Add chopped tomatoes , green chilies, turmeric, salt  and kashmiri chilli powder.
  • Cut the paneer into small cubes or grate it .
  • Cook the masala  and add fresh cream .
  •  Add paneer and cook for few minutes.
  • Preheat the oven to 190°C.
  • Punch the dough and divide it into 12 portions.
  • Roll each portion into a disc of 3-4 " diameter.
  • Place this disc in muffin tray cavity and line the walls too  as we do for tarts.
  • Add 1 tsp grated cheese in each cavity and add paneer masala .
  • I like to add mint chutney too.
  • Cover each portion with grated cheese , sprinkle mixed herbs and bake in preheated oven for 15 minutes.
