Packed with dried fruits and nuts, this easy to make cake tastes delicious and  looks stunning. My elder one doesn't like dried fruits and nuts in cake . After giving it some thought, I decided to make a lighter cake that's just as delicious as rich fruit cake with all the goodness of nuts...

I added raisins and candied orange peel but you can go ahead with pineapple, cherries, candied ginger, dried kiwi. A generous quantity of coarsely powdered nuts or flakes added to the batter and I had a special fruit n nut cake good enough to enjoy with coffee.

A few things about this recipe;
  • You could adjust the quantity of dried fruits and nuts,
  • If you plan to make it boozy, macerate the dried fruit and candied peel in rum/brandy for a day or two.

Ingredients that go into this fruit cake -
  • All purpose flour + baking powder
  • Castor sugar
  • Butter + oil
  • Eggs
  • Raisins + Mixed peel  , you can use dried fruits like pineapple , kiwi, etc.
  • Almonds +Walnuts + Pistachios
  • Curd + baking soda
  • Milk
  • Vanilla extract 
  • Orange zest
This cake is made using creaming method, which means the cake batter is prepared by creaming the butter and sugar before all the other ingredients are added in one by one.

Ingredients

  • All purpose flour -325 gm
  •  Baking powder - 2 tsp
  • Castor sugar - 200 gm
  • Butter - 150 gm 
  •  oil - 3 tbsp
  • Eggs - 3
  • Raisins + Mixed peel  - 3/4 cup
  • Almonds - 100 gm
  • Walnuts - 50 gm
  •  Pistachios- 50 gm
  • Curd - 100 gm
  •  Baking soda - 1/2 tsp
  • Milk - 100 ml 
  • Vanilla extract - 2 tsp
  • Zest of two oranges
Method -
  • Preheat oven to 170° C.
  • Prepare two 6" round tins.
  • Chop nuts, raisins and candied peels. I have used flakes.
  • Cream butter, zest, oil and sugar for 3-4 minutes.
  • Add one egg at a time, beating well after each addition.
  • Add flour and baking powder.
  • Add baking soda to curd and add it to the batter along with milk and vanilla extract.
  • Mix well to get smooth batter , add more milk, if required.
  • Fold in the nuts and candied peel.
  •  Pour the batter into prepared tins.
  • Bake in preheated oven for 45-50 minutes.
  • Baking time depends on your oven , test with skewer or toothpick for doneness.
