Paalak paneer stuffed bread
The idea of paalak paneer stuffed bread had been haunting me for a while. I had a bunch of spinach in my fridge and thought it would be interesting way to use it up . If you want your kids to eat the veggies , these serve as one of great options.
Warm , soft, fluffy, stuffed with paalak paneer - ultimate comfort food for my kids. They have already asked me to make it again.😊 It works well as a snack in tiffin or you can enjoy them with warm soup.... use any vegetable of your choice .
It is real fun to create innumerable variations with just few ingredients. Yeast is my best buddy !!!

Ingredients
All purpose flour 1 & 1/2 cup
Milk powder 1 tbsp
Instant yeast 1/2 tsp
Sugar 1 tbsp
Salt 1/2 tsp
Olive oil 2 tbsp
Method
- Mix flour , milk powder, and salt.
- Dissolve sugar in lukewarm milk.
- Add half cup of flour mix and yeast to lukewarm milk and stir.
- Gradually keep on adding flour mix.
- Once all the flour is mixed in milk , start kneading the dough.
- It'll be sticky affair first but add oil ,1/2 tbsp at a time, and continue kneading for 7-8 minutes.
- After 8 minutes the dough will be smooth, keep it covered in a greased bowl for first proof.... approx 1 hour or until it doubles up.
- Once doubled, punch the dough gently to remove air pockets.
- Divide the dough into 6 or 8 equal parts.
- Shape each portion into a ball and roll it into rectangle.
- Put paalak paneer masala and roll it halfway into a log like we do it for bread.
- Mark few cuts on the remaining portion as shown in the pic.
- Roll the log .
- Place these in a greased tin.
- Keep it covered for 20-30 minutes for second proofing.
- Preheat the oven to 180° C.
- Brush these rolls with milk and cover the tin or tent it with foil..
- Bake for 25-30 minutes.
- Once done, brush butter on rolls and cover it with paper napkin or kitchen towel.
