Almond cake rusk




Cake rusks are classic tea time treat . They are Indian version of Italian biscotti.... Crisp , crunchy , mildly sweet and delicious.





Ingredients

All purpose flour        1 cup
Butter                           100 gm
Sugar                           1/2 cup
Eggs                             3
Vanilla essence         1 tsp
Baking powder        1 tsp 
Milk                             1/4 cup
Almond flakes           2 tbsp


Method

  • Preheat oven to 170° C.
  • Line 8X8 " square tin with parchment paper.
  • Beat butter and sugar until light and creamy.
  • Add one egg at a time , mixing well after each addition.
  • Add all purpose flour, milk and baking powder and mix well to get smooth batter. Mix in vanilla essence and almond flakes.
  • Pour the batter in prepared tin and bake for 25 minutes.
  • Once done , allow it to cool for 20 - 30 minutes.
  • Slice the cake  and place them on  baking sheet with sliced side up.
  • Bake at 150° C  for 15 minutes on each side.
  • Thick slices will take more time to get baked .
  • Cool completely before storing in an air tight container.
