Eggless lemon coconut cake with poached pears


This gorgeous eggless cake topped with sweet, soft poached pears with hint of spices is worth trying. It is elegant yet easy to put together. I'm the only one who loves pear in my family. But everyone enjoyed them in cake. A lightly  whipped cream cheese would be perfect as well along with syrup. 



Ingredients

For cake batter-

All purpose flour             1 & 1/2 cup
Coconut flour                   1/4 cup
Baking powder               1 &1/2 tsp
baking soda                     1/ tsp
oil                                       2/3 cup
sugar                                3/4 cup 
milk                                    1 cup
lemon juice                      3 tbsp
lemon zest                        1 tsp
vanilla extract               1 tsp


For poaching pear -

Pear                                  2
Sugar                               1/4 cup
Beetroot juice                 1/2 cup
Water                               1/4 cup
Cinnamon stick              1"
Bay leaves                       1

You can use red wine or pomegranate juice too !!!

Method

  • Preheat the oven to 170 C.°
  • Prepare an 8" square tin.
  • Boil water and add sugar , beetroot juice, spices and pear slices.
  • Let it simmer for 5-7 minutes and take the slices out of syrup.
  • Cook the syrup until it thickens.
  • For preparing cake batter, mix all the wet ingredients together .
  • Sift the dry ingredients and add to wet ingredients .
  • Mix gently to get smooth batter ,add more milk if you find the batter thick .
  • Pour the batter in prepared tin and arrange the pear slices on batter.
  •  Bake for 50-55 minutes or until done.
  • Enjoy the cake with cream cheese and pour syrup over it .
