Eggless lemon coconut cake with poached pears
For cake batter-
All purpose flour 1 & 1/2 cup
Coconut flour 1/4 cup
Baking powder 1 &1/2 tsp
baking soda 1/ tsp
oil 2/3 cup
sugar 3/4 cup
milk 1 cup
lemon juice 3 tbsp
lemon zest 1 tsp
vanilla extract 1 tsp
For poaching pear -
Pear 2
Sugar 1/4 cup
Beetroot juice 1/2 cup
Water 1/4 cup
Cinnamon stick 1"
Bay leaves 1
You can use red wine or pomegranate juice too !!!
Method
- Preheat the oven to 170 C.°
- Prepare an 8" square tin.
- Boil water and add sugar , beetroot juice, spices and pear slices.
- Let it simmer for 5-7 minutes and take the slices out of syrup.
- Cook the syrup until it thickens.
- For preparing cake batter, mix all the wet ingredients together .
- Sift the dry ingredients and add to wet ingredients .
- Mix gently to get smooth batter ,add more milk if you find the batter thick .
- Pour the batter in prepared tin and arrange the pear slices on batter.
- Bake for 50-55 minutes or until done.
- Enjoy the cake with cream cheese and pour syrup over it .
