Jaggery coconut cookies
Coconut cookies are buttery and crisp, made with whole wheat flour, jaggery powder , desi ghee and dessicated coconut . These ingredients make the most aromatic and delicious cookies .
After few successful attempts of Coconut cookies and pistachio fennel cookies with refined sugar , I thought of replacing refined sugar with jaggery powder ....Haven't baked with jaggery so far but sometimes it is good to experiment to switch to healthier version. Isn't it ???
These cookies are full of goodness in every bite as there is no refined flour and refined sugar used .
Desi ghee 120 gm
Jaggery powder 110 gm
Whole wheat flour 170 gm
Baking soda a pinch
Coconut extract few drops
Dessicated coconut 75 gm + 1/2 cup for covering the cookies
Method

Method
- Preheat the oven to 150° C.
- Desi ghee should be soft and solid but not melted . Beat ghee until it turns white and fluffy .
- Sift the jaggery powder to remove any lumps.
- Add jaggery powder to ghee and beat it again for 2-3 minutes.
- Add flour, dessicated coconut and baking soda.
- Mix well and divide into equal sized balls. If you find it difficult to shape them , add 1 tbsp ghee and mix well.
- Flatten these over the dessicated coconut to cover them completely.
- Place the cookies on baking sheet and bake in the preheated oven for 15 minutes or until done.
