Pistachio fennel Cookies
Fennel seeds are aromatic and flavorful. Adding fennel seeds to these pistachio cookies enhanced the flavour and freshness. Melt in mouth desi ghee cookies with the goodness of fennel are perfect companion to your cup of masala chai ..... These are buttery ,crisp and not too sweet .

Ingredients
All purpose flour 1 +1/2 cup
Sugar (powdered) 1/2 cup
Desi ghee 1/2 cup
Pistachio 4 tbsp
fennel powder 1tsp
Baking soda 1/4tsp
Method
- Grind 3 tbsp pistachio and reserve one tbsp .
- Mix pistachio powder , flour , baking soda and fennel powder.
- Beat desi ghee and sugar with a whisk for 2-3 minutes until light and fluffy.
- Add dry ingredients to this and mix gently.
- Add 1 tbsp ghee if the mixture is too crumbly.
- Quantity of ghee depends on the flour used .
- Gather the dough to form a soft ball .
- Divide it into two parts and shape each part into a log and wrap it in cling film
- Chill the logs for 3-4 minutes in freezer.
- Slice the log and place the cookies on parchment paper or baking tray.
- Sprinkle pistachio on top and press gently.
- Preheat the oven to 160 C.
- Bake the cookies for 15-18 minutes.
