Pistachio fennel Cookies

I love to experiment  with flavors keeping the recipe as base recipe....

Ingredients

All purpose flour           1 +1/2 cup
Sugar  (powdered)       1/2 cup                  
Desi ghee                        1/2 cup                                   
Pistachio                        4 tbsp                                       
fennel powder               1tsp                               
Baking soda             1/4tsp         
                                      

                            


Method
  • Grind 3 tbsp pistachio and reserve one tbsp .
  • Mix pistachio powder , flour , baking soda and fennel powder. 
  • Beat desi ghee and sugar with a whisk for 2-3 minutes until light and fluffy.
  • Add dry ingredients to this and mix gently.
  • Add 1 tbsp ghee if the mixture is too crumbly.
  • Quantity of ghee depends on the flour used .
  • Gather the dough to form a soft ball .
  • Divide it into two parts and shape each part into a log and wrap it in cling film
  • Chill the logs for  3-4 minutes in freezer.
  • Slice the log and place the cookies on parchment paper or baking tray. 
  • Sprinkle pistachio on top and press gently.
  • Preheat the oven to 160 C.
  • Bake the cookies for 15-18 minutes.
