Banana bread
Banana bread is one of those recipes that is easy to bake and ingredients used are basic and easily available . It has delicious flavor and moist texture. Pistachios, almonds, pumpkin seeds and generous sprinkle of cane sugar add crunch and nutty flavor to this bread. A versatile banana bread indeed.....
2 cups all purpose flour
100 gm cane sugar
2 tbsp cane sugar , to sprinkle on top of batter
1+ 1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup pistachio, pumpkin seeds, almonds,melon seeds. grind them coarsely
1/3 cup chocolate chips
2 bananas, mashed
butter 100 gm , melted
2 eggs
1/3 cup curd
1 tsp essence
Method
- Preheat oven to 180° C.
- Grease the loaf tin and dust with flour.
- Mix flour ,sugar , baking powder, baking soda. Add chocolate chips and coarsely grounded nuts.
- Beat eggs for 2-3 minutes.
- Add melted butter, mashed banana, curd and essence.
- Gently fold wet ingredients into dry ingredients . Do not over mix, mix until combined .
- Pour the batter into the prepared tin , sprinkle few pistachio and nuts on top.
- Sprinkle 2 tbsp cane sugar on batter and bake in the preheated oven for 45-50 minutes.
- Cool on wire rack and remove loaf from tin.
