EGGLESS TUTTI FRUITY COOKIES are delicious , colorful ,  packed with tutti fruity , custard powder and perfectly balancing the sugar with the   pineapple essence...... nothing can beat the aroma of freshly baked cookies...  You can add cashews too...

Ingredients

All purpose flour                 1 +1/2 cup
Sugar  (powdered)             1/2 cup
Desi ghee                              1/2 cup
Tutti fruity                         4 tbsp 
Custard powder               2 tbsp
Pineapple essence           few drops
Salt                                     a pinch
Baking soda                    1/4 tsp (optional)




                           


Method 
  • Sieve flour , custard powder, baking soda and salt.
  • Beat desi ghee and sugar with a whisk for 2-3 minutes until light and fluffy. Add essence at this stage.
  • Add dry ingredients to this and mix gently.
  • Add tutti fruity to it.
  • Add 1 tbsp ghee if the mixture is too crumbly.
  • Quantity of ghee depends on the flour used .
  • Gather the dough to form a soft ball .
  • Divide it into two parts and shape each part into a log and wrap  in cling film.
  • Chill the logs for  3-4 minutes in freezer.
  • Slice the log and place the cookies on parchment paper or baking tray. 
  • Chill the cookies for 3-4 minutes.
  • Preheat the oven to 160 C.
  • Bake the cookies for 18-20 minutes.
