Pav -Ladi pav


Super soft pillowy pav.... Adding the dry ingredients gradually to the lukewarm milk and kneading for 10 minutes made them super soft.

Ingredients

All purpose flour  3 & 3/4  to 4 cup
Milk powder         4 tbsp
Instant yeast         1 &1/2 tsp
Sugar                    2 tbsp
Salt                       1 tsp
Olive oil                4 tbsp
Lukewarm  milk    1 &1/2 cup

Method

  • Mix flour , milk powder, and salt.
  • Dissolve sugar in lukewarm milk.
  • Add one cup of flour mix and yeast to lukewarm milk and stir. 
  • Gradually keep on adding flour mix.
  • Once all the flour is mixed in milk , start kneading the dough.
  • It'll be sticky but add oil ,1 tbsp at a time, and continue kneading for 9-10 minutes.
  • After 10 minutes the dough will be smooth, keep it covered in a greased bowl for first proof.... approx 1 hour or until it doubles up.
  • Once doubled, punch the dough gently to remove air pockets.
  • Divide the dough into 20 equal parts.
  • Shape each portion into a ball and place them in a greased tray leaving some place between them.
  • Keep it covered for 20-30 minutes for second proofing.
  • Preheat the oven to 190° C.
  • Brush the pav with milk and cover the tin with lid.
  • Bake for 25-30 minutes.
  • I bake them covered for 23 minutes and uncovered for two minutes to get nice brown colour.
  • Once done, brush butter on pav and cover it with paper napkin or kitchen towel.

Hi...loved the pavs...i hv one ques which brand of instant yeast to use..i hv active dry yeast ..how to use that as replacement...

Hi Neha, I'm using weissmill Instant yeast.
One tsp of instant yeast is to be replaced with 1&1/4 tsp of active dry yeast and active dry yeast needs activation.

I have used instant yeast ... So use the same quantity as mentioned in recipe.

Need to ask donyou use unsweetened milk powder or sweetened...pls mention tbe brand of milk powder..

I use amul/ everyday dairy whitener ,whichever is available .
