Lemon pistachio cake


Lemon pistachio cake with lemon glaze is definitely worth trying because it smells amazing and taste delicious !!!

Ingredients
All purpose flour     1 & 1/4 cup
Baking powder        2 tsp
Eggs                            4
Sugar                         3/4 cup
oil                                3/4 cup
lemon zest                 2 tsp
milk                            1/4 cup
Lemon essence         1/2 tsp
Pistachio  to sprinkle on top of lemon glaze
For lemon glaze mix half cup of  powdered sugar  with juice of one lemon .
Method
- Preheat the oven to 160° C.
 - Grease the pan and dust flour or line it with parchment paper.
 - Beat eggs for 5-6 minutes and add powdered sugar .
 - Beat this for 7-8 minutes until it doubles up in volume and color changes to pale yellow.
 - Add lemon essence and lemon zest.
 - Add oil gradually and mix well.
 - Sieve flour and baking powder together.
 - Add this to egg mixture and mix gently.
 - Add milk to the batter and mix.
 - Pour the batter in prepared pan and bake in preheated oven for 45-50 minutes.
 - Allow it to cool down.
 - Pour lemon glaze on the cake .
 - Sprinkle pistachio on glaze.
