Eggless apple walnut streusel cake


Eggless apple walnut streusel cake  has bananas, apple chunks, salted caramel in batter topped with walnut crumble for that perfect crunch. It is flavorful and fills every nook n corner of house with  the cinnamon aroma. This cake is  beautiful and I'm in love with the crunchy topping. 


Ingredients

All purpose flour                       1 & 1/2 cup
Sugar                                           3/4 cup + 2 tbsp
Banana                                       1
Apple (finely chopped)           1 cup
Baking powder                        2 tsp
Cinnamon powder                  1 tsp
Oil                                               1/3 cup
Milk                                           2/3 cup
Salted caramel (optional)    3 tbsp

For streusel topping
Oats                                           2 tbsp
Walnuts, chopped                  3 tbsp
Brown sugar                          5 tbsp
Almond powder                     1/8 cup
All purpose flour                   1/8 cup 
Melted butter                         3 tbsp

Mix everything together and keep it refrigerated for further use.

Method

  • Sieve flour, baking powder and cinnamon powder 3-4 times .
  • Preheat the oven to 170° C.
  • Prepare 6"  inch tin by greasing and lining it with parchment paper.
  • Mash banana and add oil and milk to it . Mix well using hand whisk.
  • Add sugar and other dry ingredients to wet mixture and mix  gently .
  • Fold in chopped apple and salted caramel , pour the batter in prepared tin.
  • Sprinkle the streusel topping uniformly over the batter .
  • Bake in preheated oven for 45- 50 minutes or until done.
