Apple pie cake



Apple pie cake - a vanilla and cinnamon flavored  sponge batter topped with apple pie filling , baked and drizzled with caramel sauce is perfect to be enjoyed warm or with ice cream.





Ingredients

All purpose flour                             1 & 1/2 cup
Butter                                                 100 gm
Sugar                                                 1 cup
Eggs                                                   3
Vanilla extract                                 2 tsp
Baking powder                                1/4 tsp
Baking soda                                      1/4 tsp
Curd/ greek yoghurt                      1/3 cup  
Milk                                                     1/4 cup
Cinnamon powder                          3 tsp
Brown sugar                                    5 tbsp
Milk                                                     1 tbsp
Apples  (chopped)                            1 cup

Method

  • Mix chopped apple , 1 tsp cinnamon powder and 3 tbsp brown sugar and keep aside.
  • Preheat the oven to 170° C.
  • Prepare a 8"  square baking tin by greasing and lining it with parchment paper.
  • Beat together butter and sugar until light and fluffy.
  • Add eggs , one at a time , and beat well after each addition.
  • Add vanilla extract and mix well.
  • Sift flour , baking powder and baking soda over this mixture .
  • Add curd and mix well to get smooth mixture.
  • Add 1/4 cup milk and whisk well.
  • Remove 3/4 cup batter  to a separate bowl . Add 2 tsp cinnamon powder, 2 tbsp brown sugar and 1 tbsp milk and mix well .
  • Pour half of  the plain batter  and spread the cinnamon batter on top of it . Pour the remaining half of plain batter.
  • Create swirls with a skewer or toothpick.
  • Spread the apple mixture over the batter evenly and tap the tin on counter to remove any air bubbles.
  • Bake in the preheated oven for  40-45 minutes or until done.
  • Cover the tin with foil if you find the apples  getting over browned .
  • Allow the cake to cool and drizzle the caramel sauce over it .
  • Serve warm.
