Plum cake


A perfectly  moist, light , easy and delicious  sponge studded with plums  making it perfect  for desserts . It's a perfect blend of sweet and tart. Either add the plum pieces to batter or just layer them over the batter . Dust it with sugar and you are  done !!!
 You can use any fruit , almost any, in this recipe. I have tried with blueberries, strawberries  .... added them to the batter and baked  !!! Don't forget to toss them in flour, otherwise they might just sink to the bottom of the cake.


Ingredients

All purpose flour                       1 & 1/2 cup
Baking powder                          1/2 tsp
eggs                                              4
Sugar                                            1 & 1/4 cup
Oil                                                  1/2 cup + 2 tbsp
Milk                                               1/4 cup
Lemon zest                                   1 tsp
Vanilla extract                            1 tsp
Plums                                            4
Granulated sugar                       2 tbsp

Method
  • Preheat the oven to 170° C.
  • Prepare a 8 " square or 8 " round  tin .
  • Sprinkle granulated sugar over sliced plums.
  • Whisk flour and baking powder.
  • Beat eggs and sugar  until light and fluffy.
  • Add lemon zest, vanilla extract and  add oil gradually .Mix well until well combined.
  • Add flour mixture  and milk . Mix gently  to get smooth batter.
  • You can either  add the plums to the batter or  arrange them on top of the batter .
  • Pour the batter in prepared tin .
  • Bake in preheated oven for 40 minutes.
  • Once done , take it out of the pan and allow it to cool.
  • Dust with powdered sugar.

Hi Kiran, Need to beat egg whites and yolks together with sugar in this recipe ? Also when to add the sugar and it should be beaten till ribbon consistency?

This looks amazing and would like to try. Please clarify.

Beat whole eggs n sugar until it gets light in color and doubles in volume... No need to seperate egg whites ... it'll take approximately 7-8 minutes.
