Cocktail samosa with homemade phyllo sheet
Samosa - A deep fried snack with potato filling in home made phyllo sheets and shaped into triangle. Cocktail samosa is a perfect snack/ appetizer for your parties which can be made ahead and can be served as starter and it's everyone's favorite too . Make them , freeze them and fry them whenever required ..... no need to thaw !!!
These are similar to the samosas you get in freezer section of many stores. Making the phyllo sheets at home is good idea if you can't find the ready-made phyllo sheets. homemade phyllo sheets can be used to make baklava, spring rolls , keema samosa !!!
Ingredients
Phyllo sheets 6
Boiled potatoes 5
Onion 2
Garlic chopped 1 tsp
Cumin seeds 1 tsp
Curry leaves 6
Green chilli 3
Turmeric powder 1/2 tsp
Red chilli powder 2 tsp
Salt 1 & 1/2 tsp
Oil 3 tbsp
Peas 1/4 cup
Asafoetida a pinch

Method
- Heat oil in a pan. Add cumin seeds, chopped garlic , curry leaves and asafoetida.
- Add chopped onions and green chillies and saute them well for 3-4 minutes, until translucent.
- Add turmeric powder , red chilli powder and salt and mix well.
- Add peas boiled and mashed potatoes and mix everything well and cook for 7-8 minutes on low heat.
- Adjust the seasoning and allow it to cool.
- Cut the phyllo sheets into 4 quarters.
- Shape the samosas in square or triangle as demonstrated in folding samosa two ways . Fill them with potato filling and seal the edges.
- Seal the samosas with water or cornflour slurry , I used water.
- Once all samosas are ready , fry them on medium heat.
- Serve them hot with green chutney.
