Phyllo sheets



Phyllo means "sheet" in Greek.... It seems difficult to make phyllo sheets at home but we can always succeed in few attempts. It's definitely a time consuming process but it makes your life so easy .  And there is nothing better than homemade !!!
These are crisp, delicious and super thin. Prepare these sheets and freeze them to use later.  These sheets can be used to make sweet and savoury pockets /parcels, spring rolls , samosa .... n baklava too !!!

Ingredients

All purpose flour        1 & 1/2 cups
Oil                                  3 tsp
Salt                                1/4 tsp
Water                            1/2 cup + 2 tbsp
Lemon juice                  2 tsp
 Corn flour                     for rolling

Method

  • Place  all purpose flour in a mixing bowl .
  • Add salt ,oil , lemon juice and warm water and knead it to a smooth dough, at least for 8-10 minutes.
  • Leave it at room temperature for 1-2 hours.
  • Divide it into 15 parts and shape them into equal sized balls.
  • Sprinkle corn flour on working surface.
  • Roll out one portion into a circle of 5 " .
  • keep it aside and roll two more circles like this.
  • Stack these two on first circle, dusting each layer with corn flour, it'll prevent them from sticking to each other.
  • Roll these together to get super thin sheets of  12"diameter .
  • Separate the layers in between and dust them with corn flour to prevent sticking and getting thin layers.
  • Repeat the process with remaining dough balls, working with three in a set.
  • Separate the layers before storing and don't forget to dust with flour and place parchment paper between each sheet before stacking .
  • Place the rolled sheets on parchment paper and cover them with another layer of parchment paper.
  • Place them in a zip lock and refrigerate .
  • Thaw them before using as they might break .
  • Use these to make potato cheese rolls ,baklava , spring rolls  and cocktail samosa !!!
