Mango lassi popsicles



We love thick and creamy lassi and these mango lassi popsicles are even more delicious with mango pulp added to it with a hint of cardamom and saffron . It's sweet , creamy , thick and loaded with mangoes. Using full fat  yoghurt will prevent the formation of ice crystals. Cardamom lends an aromatic note and saffron enhances the color. You can play with flavors but do keep in mind use flavor that compliment each other. As I have seen  those kulfi vendors using rose syrup for falooda I thought of brushing the popsicles with it and topped with pistachios . I had prepared few without rose syrup too , but everyone poured rose syrup later on them .



Ingredients

Thick yoghurt/curd                           1 cup
Mango puree                                       1 cup
Cardamom powder                            1/4 tsp
Saffron                                                   few strands
Milk                                                         2 tbsp
Sugar /honey                                       4 tbsp (depends on the sweetness of mangoes)
Rose syrup (optional)                         1/8 cup
Pistachios                                               to sprinkle

Method

  • Add saffron to milk and keep aside for 5 minutes.
  • Blend yoghurt, sugar/honey, saffron milk , cardamom powder, and mango puree together to get a smooth mixture. 
  • Pour this mixture into moulds and freeze them covered for 4-5 hours.
  • Remove the popsicles from mould, brush rose syrup n sprinkle pistachios.
